Why do you need to put dirt on it all the time. Isn't it better to just have it open for easy access? I got a septic tank but the lid is above ground.

I think later today, I'll use a die-grinder and cut-off wheel to chop that inlet baffle off. All it does is clog with grease. Hopefully I don't cut my arm off or fall in.

Have you checked the outlet of it? It was full to the brim in some previous pictures and that is not normal. It should have an outlet so that it never gets over filled.
Another thing I noticed, the one I got has three chambers and yours have only one.

And since we are on solid clay, the drain field is buried in gravel and sand. There are two drain fields and a switch to choose which one you want so you don't over use one.

Interesting, the one I have has separate chambers, essentially with walls that are porous in order to filter the water. With your setup, there will probably escape some poop to the second chamber. Around here, pretty much every county has one or two family businesses making/casting the tanks. Round single chamber is obviously the easiest way to go. I know multi chamber tanks are more common elsewhere. As far as all the "crust" in the tank. I assume that is a combination of the 60 sticks of butter we go through a month and the way dishwasher soap works.
I did do an experiment like 3 years ago. I took five jars of water and heated them in the microwave until they were all around 150 degrees. Then I added a thin slice of butter and various soaps to see what would happen.
The far left jar just got two drops of regular dish soap. As you can see, that completely emulsifies any fat/oil. The next two jars just had a couple of drop of some dishwasher "gel" soap that my wife swears works best. The next two were cascade powder, with the far right being cascade powder + a bit of sodium tripolyphosphate but that seemed to make no difference. Then I gave the jars a good shake.
Once cool, I poured them out. The gel soaps seemed to leave a "puck" at the bottom somehow.
Then rinsed with cold water to see what was left sticking
As far as "dishwasher soap" the powders seemed to leave less grease behind, so I assume that means they would be less likely to coat your pipes. So I told the wife to use the powder. But she usually doesn't
